I am among those who eat soup year round. Perhaps it has its explanation in that I live in Gothenburg, where it rains more often than most people want to admit. This soup was when I had a couple of old vegetables in the fridge and had to clear the pantry. But the little red lentils, coconut milk and vegetables samosa will actually pretty far. Apple cider vinegar in soups is a very simple way to give the flavors a real boost. The food gets a deeper and clearer taste, but taste like vinegar. Everything well as enhanced and come into their own. It might seem a bit strange to have toasted coconut on a soup, but here it works! samosa To the right, I served quinoa but you might as well have brown rice, millet or oats to. Hit with all your tips! 4-6 port. 1 leek, white part thinly sliced 3 cloves garlic, minced salt flakes approximately 1 pinch cayenne pepper (according to taste) 1 medium sweet potato, peeled and diced 1 large carrot, peeled and sliced 1 liter of vegetable broth 1 cup red lentils, rinsed 1 can of organic coconut milk, grated peel and juice from 1 lime few teaspoons apple cider vinegar 1 tablespoon coconut oil to fry Accessories: toasted coconut, salt, roasted pumpkin seeds and oats or quinoa for example, do this: Heat the coconut oil in a large saucepan. Fry the leeks, carrots and sweet potatoes along with salt until the leek has softened. Add garlic and cayenne pepper and cook for another minute. samosa Pour in the vegetable broth and lentils and boil the soup. Reduce heat and simmer with the lid on until the vegetables are tender. Add the coconut milk and lime juice and let simmer for a few minutes. Blend the soup smooth in a blender or with a hand blender. Season with cider vinegar, a teaspoon at a time until the soup has received a full and clear taste. Season samosa with cayenne pepper and salt. Serve in bowls topped with toasted coconut, salt, toasted pumpkin seeds, a scoop of oats and extra cayenne pepper. The soup is even better the day after and can be frozen up.
